Air Fryer Valentine’s Mediterranean Stuffed Peppers

Stuffed Romano peppers with lentils, tomatoes and feta

This delicious recipe offers a great vegetarian option for Valentine’s Day, and with the Instant Vortex Plus, it is so easy to do! Stuffed peppers can take all sorts of flavours so, as I always say, make it your own by using the ingredients you love.

INGREDIENTS
2 Romano peppers, topped and slit open down one side, with seeds removed
1 packet cooked puy lentils – I use Merchant Gourmet
6 large sun-dried tomatoes, sliced
1 large handful spinach, rinsed and sliced
1 small shallot, diced and cooked
1 tbsp dried oregano
1 tsp ground black pepper
2 tbsp pine nuts
1/3 packet feta, rinsed, halved and crumbled
2 tbsp flat-leaf parsley, rinsed and chopped
1 tbsp lemon oil – I use Yare Valley cold-pressed rapeseed oil
Freshly ground black pepper, to taste

Begin by pre-heating your air fryer to 180°C.

Prepare the stuffed peppers by carefully cutting down one side of each Romano pepper to the end with a sharp knife. Carefully remove the seeds inside to keep the pepper complete.

Make the stuffing by putting the lentils, sun-dried tomatoes, spinach, cooked shallot, oregano, and black pepper in a bowl. Mix well to combine, then fill the inside of the peppers. You want to be generous with this. There may be some left over which you can cover and keep in the fridge to enjoy the next day.

Carefully place the peppers into the pre-heated air fryer and top with the pine nuts.

Cook for 15 minutes.

While the peppers are cooking, mix the feta, flat-leaf parsley and lemon oil in a bowl, then season with black pepper.

When the 15 minutes are up, open the drawer of the air fryer and split the feta mixture over the peppers. Close the drawer and cook for a further 5 minutes.

When cooked, remove the peppers from the air fryer and serve with garlic bread and a green salad on the side.
